Hospitality rooted in the earth

At Borgo Mulino a Vento, sustainability is simply part of our everyday way of being. Our journey is defined by tangible choices - energy, water, sourcing, and our connection to the land - monitored over time and gathered in a Sustainability Plan open to all.
We are in the process of obtaining certification under the Ecoluxury sustainability assessment program for accommodation facilities. In the meantime, we provide full visibility of the data and actions behind our commitments.

We protect our land: implemented actions

Energy

Reduced energy consumption

We track electricity consumption alongside guest attendance to accurately measure the resort’s efficiency, independent of occupancy rates. From 2024 to 2025, energy consumption per guest fell from 9.02 to 8.90 kWh, even as expanded agricultural activities - such as the vegetable garden, orchard, and fig grove - increased irrigation demand.
This improvement reflects the progressive adoption of LED lighting in common and service areas, the regulation of air conditioning between 20–22°C, and ongoing staff training in efficient operating practices.

Water

Alternative production

The wine bar, shop, and tasting room (approx. 1,270 sq ft, built in 2018) use a solar thermal system to produce domestic hot water, reducing related energy consumption by an estimated 60–80% annually.
From 2026, renewable systems for domestic hot water will be expanded to 14 of the 55 rooms, supporting a gradual reduction in LPG use and helping to stabilize per capita consumption over time.

Natural assets

Deep roots in the territory

The Borgo is named after a 16th-century underground oil mill, just 328 feet away - now carefully restored and open to visitors. A place where the story of our local olive culture unfolds, woven into the very experience of your stay.
Through the Tenuta D’Alba farm that surrounds the resort, we have taken action against the Xylella crisis, planting over 300 olive trees and 160 fig trees. Our organic vegetable garden provides approximately 70% of the produce used in the kitchen.
To stay at the Borgo is to step into an authentic rural landscape, where historic villages, cultural heritage, and food and wine routes unfold around you. To discover the area with a lighter footprint, we provide charging stations for electric cars, bicycles, and e-bikes.

Supplies

Local suppliers, short supply chain

About 90% of our regular suppliers are from Apulia. All lie within a few miles of the property - from the village butcher to the fishmonger in Otranto, from a mill just 0.6 miles away to a fresh pasta producer in the village itself. We select our suppliers based on clear criteria: prioritizing local producers, avoiding single-use packaging, and choosing products with organic, Ecolabel, or FSC certifications where available. Your actions during your stay play a meaningful role. 


Here are a few simple actions that can make a difference:

  • Please use water and energy responsibly by adhering to recommended air-conditioning settings and reporting any leaks.
  • Please consider reusing your towels and limiting linen changes to when they are truly needed.
  • Kindly sort your waste by following the guidelines in your room and in the common areas.
  • Discover the surroundings by bike or e-bike, where the roads of southern Apulia reveal their charm at a gentle pace.
  • Carry home the flavors of the territory: the produce from our garden and shop is grown and sourced just nearby.
