The Tòmolo menu
At Il Tòmolo, the gifts of the blue sea intertwine with wild herbs, seasonal vegetables, and meats rooted in our land. A thoughtfully curated menu for every palate, celebrating Mediterranean flavors and the finest produce from our estate - fresh vegetables, ripe fruit, and extra virgin olive oil.
In addition to our à la carte dinner, Il Tòmolo offers an elegant half-board experience, with three courses of your choice each day at a fixed price. The half-board experience is available by reservation at the time of booking your stay at Borgo Mulino a Vento.

Our wine list is a tribute to Apulian wine-making excellence. We curate a dedicated space for small local producers, preserving their heritage and showcasing their excellence alongside the region’s most celebrated wines. Each bottle is expertly paired with Il Tòmolo’s dishes, elevating and revealing its distinctive notes.

The historic stable and pergola
The restaurant is set within a beautifully restored historic stable, preserving its original warmth and welcoming atmosphere. The space opens onto the agricultural estate on one side and onto an elegant wooden veranda on the other, framed by windows that overlook the heart of the resort. Enveloped in jasmine and lush vegetation, it is a haven for lingering dinners, savored without haste.
On request, an intimate outdoor setting can be reserved just for you.

The restaurant is open to resort and external guests from 7:30 p.m. to 9:30 p.m. No seating is available after this time.
